At the Noguchi Naohiko Sake Institute, working alongside young kurabito (brewery workers) who will carry on their techniques, the toji, Naohiko Noguchi, himself continues his challenge of creating the best sake of his life, as the culmination of his more-than-70-year career in sake brewing.

Yamahai Aiyama 2018vintage

This fruity sake has a tart aroma reminiscent of strawberries and a thick, gentle umami from the Aiyama rice, which blends elegantly with the lactic acidity peculiar to the yamahai fermentation method.
Enjoy the fruity aromas at temperatures of around 12°C, and the creamy, pleasant lactic acidity when warmed to around 42°C. A highly versatile sake to be enjoyed with meals that pairs well with a variety of dishes.

Yamahai Miyama Nishiki 2018vintage

Citrus aromas with a fresh, botanical acidity and an exhilarating feel on the throat from the Miyama-Nishiki rice are the predominant features of this sake.
Drunk cold at around 10°C, it pairs beautifully with raw seafood such as sashimi and sushi. When enjoyed warm at about 42ºC, the aromas and umami are magnified, making it an excellent match for meat dishes.

Junmai Daiginjo 2018vintage

This sake has an elegance that evokes mellow fruity aromas of lychee, papaya, and pineapple. It has a fresh acidity with a cooling sensation and a clear umami. It is characterized by its elegant acidity and beautiful, lingering after notes.
Pair with simple, delicate Japanese dishes and enjoy in a wine glass or other cup that will enhance the aromas, without over-chilling.

NOGUCHI NAOHIKO 01 2017vintage

2017 vintage brewed in the first year of the Noguchi Naohiko Sake Institute’s operations. Noguchi himself selected the very best tank from that year and managed its aging with meticulous care for over a year to produce this first in the LIMITED EDITION series. Characterized by vibrantly sweet aromas of lychee and papaya, well-rounded umami concentrated by the aging process, elegant acidity, and lingering after notes. The concentrated umami makes it an excellent match for sweet foods such as dried fruit.
